Our cheese dairy is located on the Causse Méjean plateau in Lozère, a UNESCO World Heritage site. We're in the small village of Hyelzas, population 50, which is experiencing a revival. In Hyelzas, we make raw sheep's milk cheeses. Our range of 20 traditional cheeses includes semi-pressed and soft cheeses (Meule, Tommes, Soureliettes, Pérail, Brique, Fédou, Cardabelle, Titounet, Lactic, Brousse, etc.).
